Ingredients:
½ 12 oz bag of frozen blueberries
1 cup of steel cut Irish Oatmeal (McCann’s Steel Cut Oatmeal )
½ cup chopped walnuts
Cinnamon or pumpkin pie spice
Directions:
- Bring 4 cups of water to a rolling boil
- Add 1 cup of steel cut oatmeal, ½ 12 oz bag of frozen blueberries, ½ cup of chopped walnuts,
- Sprinkle a generous amount of cinnamon or pumpkin pie spice
- Simmer for about 30 -35 minutes until all the liquid is absorbed, stirring occasionally
Notes: This recipe is great to double and re-heats well Each 1 cup serving provides about 270 calories, 27 grams of carbohydrate, 5 grams of protein, 8 grams of fat and 4 grams of fiber
Hint: some diced banana on top can add some natural sweetness (½ large banana/or a small banana = 15 grams of carbohydrate)
