The other day I was looking over my cookbooks and spotted one of my old favorites.
Cooking with Trader Joe’s Cookbook by Susan Greeley, Ms RD
I’ve had so much fun cooking with it the past week that I thought I should write a quick post about it to let you guys know a little bit about it.
Now I may be a bit biased about how good this book is because, just like me, the author is a registered dietician! So you can be sure they know what they’re talking about.
The book is full of great recipes, which are quick, easy and (as you might guess if I’m a fan of them) HEALTHY! Some of the recipes are even gluten free. There aren’t too many ingredients, either. You can pick them all up at Trader Joes, too, as the name suggests. To be clear, though, you don’t need to use Trader Joe’s to find all these ingredients but I think it does make it a bit easier. For example, a big ingredient in all the soups is mirepoix, which is a combination of diced carrots, celery, and onions. They sell mirepoix premade at Trader Joes, which saves you the time and effort of dicing those veggies yourself.
In addition the book contains tips and information on staying healthy and losing weight. It’s a nice feature of the book that there are some interesting things to read while your delicious meals are cooking.
